Recipe: Healthy Buckwheat Pancakes with Chocolate Sauce (Vegan)

When I first started consuming buckwheat, I found it quite bland (I’ve adjusted my tastebuds since then). I often add fruit and other extra sweet nibbly things such as bananas and frozen blueberries, vegan ice cream (if I’m being naughty) melted in the microwave.

If you feel like something a little extra, try the pancakes with some vegan chocolate sauce!

Pancakes

Ingredients:

  • 1 cup of buckwheat flour
  • 2/3 cup of vegan milk of your choice (coconut, oat or almond are perfect!)
  • ½ cup of rice malt syrup (If you don’t have this, you can use honey)

Method:

  1. In a large bowl, mix the buckwheat flour and milk together until a smooth mixture is produced
  2. Stir in the rice malt.
  3. Heat a skillet or non-stick frying pan to medium to high heat.
  4. When the pan is ready, spoon a fistful size of the mixture onto the pan.
  5. Let it cook on one side for about 3 minutes before flipping. Leave for 3 minutes
  6. Do this until there is no more mixture leftover.

Chocolate Sauce

Ingredients:

  • ½ cup of rice malt syrup (If you don’t have this, you can use honey)
  • 4 tablespoons of cacao
  • 3 tablespoons of melted coconut oil

Method:

  1. Mix the rice malt syrup and cacao together before gradually adding the coconut oil
  2. Continue mixing until a smooth mixture is made
  3. Pour over pancakes, add any other toppings and enjoy!
